Sea Moss Vanilla Mango Moose

Vanilla Moose

½ cup (64g)  milk

½ tsp vanilla extract

50g Sea moss (soaked)

½ cup (64g) Heavy Cream

4 oz (113g) Sour Cream

½ cup (64g) Granulated sugar


Mango Curd

110g Granulated Sugar

110g Mango puree (Blend mango, 1 tsp of lemon juice and water)

60g Unsalted Butter (chopped in small pieces)

5 egg yolks and 1 whole egg

50g Sea moss (soaked)

Yellow food colouring (optional)

Sea Moss in Milk and Vanilla

Directions:

  • Wash then soak sea moss for 4-6 hours.  
      1. In a sauce pan combine milk, vanilla and sea moss over a low to medium heat. Mix continuously until it steams then remove from heat.
      2. Allow the sea moss mixture to cool before blending and straining.
  • In a separate container mix the sour cream and sugar until combined.  *Mixture should remain refrigerated*
  • Using a cold bowl and beater whip the heavy cream until fluffy. *Heavy cream will not whip unless tools are cold prior to.
  • Fold heavy cream into sour cream mixture.
  • Combine the heavy cream mix and the sea moss mixture. Mix until evenly combined.
  • Distribute among serving cups and refrigerate.


  • Mango curd


    Directions:

  • Using the bain-marie method, combine the mango puree, eggs and sugar. Whisk continuously until the sugar and eggs are completely dissolved.
  • Remove the mixture from the heat and gradually add in the butter. 
  • Allow the mixture to cool.
  • Blend the mixture and sea moss. Strain to remove lumps. *If a deeper yellow colour is desired add few drops of yellow food colouring until desired colour is achieved.*
  • Add the mango curd as a topping to the refrigerated moose. Refrigerate again until the curd is thicken.

    1 cup ice 

    1 cup plain G

    ½ cup parsley 

    ½ cup spinach

    1 cup cucumber 

    1 cup green apple 

    ½ cup sea moss 

    2 tablespoon almond butter/ peanut butter 

    1 teaspoon flax seed

    1 banana 

     

    Berry Bomb

    1 cup ice 

    1 cup plain Greek yogurt

    ½ cup almond/soy milk

    1 cup fresh/frozen strawberries 

    ½ cup fresh /frozen blueberries 

    ½ cup fresh/ frozen raspberries 

    ½ cup fresh/ frozen pineapple 

    1 banana (optional)

    1 Tablespoon sea moss powder. 

    1 teaspoon chia seeds 

    Dash of cayenne (1/8 teaspoon)

     

    Sea Moss Punch

    Place approximately 100g of sea moss in a bowl with about 2.5 quarts of water and a teaspoon of lime juice and soak for one hour. Rinse in fresh water then place in a pot with 5 quarts water, 3/4 tsp cinnamon powder,¾ teaspoon cloves, ¼ tsp nutmeg and boil until it reduces to about 3.5 quarts.

    Place sea moss mix in a blender that is safe for hot liquids, or strain, pushing the mix through with the back of the spoon. Allow to cool. Mix in milk/almond and sugar/honey to taste. Any preferred milk or sweetener. Alcohol (Rum or Brandy ) can be added if desired.
